There is just something about chocolate that gives me those little hearts in my eyes and a flutter in my heart!! Or maybe those flutters are the calories marching two by two from my mouth to my thighs. Ehh, either way I am sure I am not the only chocolate and sweets craver out there! I have a mighty strong sweet tooth! I absolutely looove my shakeology, but sometimes drinking it in a shake form doesn’t satisfy that CRAVE of just biting into a piece of chocolate! That is where these babies come in!!

Gooey Shakeology Oatmeal Bars!

Ingredients:

  • 4 scoops Chocolate Shakeology (or Vegan Chocolate)
  • 3 cups old-fashioned rolled Oats
  • 1 tsp. unsweetened cocoa powder
  • 1 dash of ground cinnamon (I dashed two or three time :x)
  • 1 cup non-fat milk
  • 1/2 cup all-natural peanut butter (I like JIF, it doesn’t have all that oil on the top!)
  • 1/2 tsp pure vanilla extract
  • nonstick cooking spray

Directions:

  • Combine Shakeology, oats, cocoa powder, and cinnamon in a large bowl and mix well.
  • Add milk, peanut butter, and vanilla extract; mix well. At this point I usually start mixing with my hands to make sure that everything is combined and you won’t find a big hump of PB when you take a bite (not that, that is already a bad thing!)
  • Place in an 8×8 in pan, and coat it slightly with the nonstick cooking spray.
  • Cover with plastic wrap and press down to flatten into pan.
  • Refrigerate for 3 hours, then cut into 12 bars.

Makes 12 servings.     |     Serving size: 1 bar each

It is the Holiday season and there is not a way around cookies. I have looked high and low, and no matter what, they pop out of everyone’s hands at some point in the season. Of course I won’t complain. I love to stay healthy and on track, but I am human. I will order a cheese steak once in a great while if that is what I am STARVING for. Because if I don’t give in from time to time, you will just be miserable and then go ALL IN and ruin all your hard work! So, I feel the same way about cookies as I do my cheat day cheesesteak.

I like my cookies how I like my healthy recipe, short, sweet and quick!!

When the ingredients list is short, we are all happy!

When we don’t have the chill the dough for 3 days, we are all happy!

When we don’t need to have 7 different bowls going for one recipe, we are all happy!

We made I think 7 different kinds of cookies by the time we were all done. It was a lot of fun, and so cool that we had completely different cookies by the end! Not a single batch were anywhere near the same! We made these, Minty Devil’s Chocolate Cookies, a Peanut Butter Mini muffin type cookie, chocolate chip, a buttery nut one, oatmeal white chocolate chunk and cranberry cookies, no bakes, and molasses. All equally tasty in their own way!!

Okayyyy. I’ll just get to the ingredients now!! 😉

  • 1 box Devil food cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • dove mint chocolate squares

Directions: Combine all ingredients and scoop tablespoon sized servings onto a non greased baking sheet. Once on the sheet slightly press balls down with your thumb to make a slight indentation. Bake at 350 degrees F for 6-9 minutes! Meanwhile, you can start unwrapping the Dove chocolates so they are ready as soon as the cookies come out of the oven! Once done baking, pull out of the oven and (while still hot) place Dove mint squares onto the center of the cookie! Then ENJOY!!

* When using a tablespoon scooper you should make between 20-24 cookies. (that is what I used)

These are more of a summer type treat- actually who am I trying to kid, it’s fruit and chocolate, it is an EVERYDAY type of treat! 🙂 I don’t think there is anyway you can mess this recipe up!! Even if you are licking chocolate off the walls! 😉 Very easy ingredients (see picture below!)

Directions:

  • Peel banana and cut, cut pineapple in about 1 inch pieces, and slice strawberries in half (make sure you cut the tops off first!)
  • Heat up chocolate and coconut oil on the stove, stir occasionally so you don’t burn it! Also, line a baking sheet with parchment paper; set aside
  • Stack one of each piece of fruit onto a toothpick or screwer
  • Dip one trio at a time into the melted chocolate, at this time add nuts or shredded coconut before the chocolate hardens
  • After dipped, place onto a baking sheet lined with parchment paper. Once all are complete to your preference, place baking sheet in the freezer to harden chocolate before serving.

I have not been able to talk to everyone in such a long time! I am so sorry about that! i am going to really work my hardest to post for you ladies and gents more often!! Of course as most of you know I am completely obsessed with SHAKEOLOGY! It has been a game changer for me, as well as many others. However, I do like to switch it up once and a while! I did a little research and came up with Inside out Shakeology Peanut Butter cups!

I was like wow, this is perfect since I have been on a slight candy kick for some reason lately! I have no idea where it came from! So this recipe was really easy, I thought I would give it a try!

The ingredients are simple:

2 table spoons of each: Chocolate Shakeology, coconut oil, water, PB (or PB2)

Then some mini muffin FOIL holders

Step one: Melt Coconut oil. Step two: add PB or PB2 to coconut oil Step three: place Shakeology in a seperate bowl

I used regular peanut butter, the recipe called for chocolate PB2. I honestly wish I would have taken the time to go to the store and get the proper ingredient! It wasn’t horrible with regular peanut butter, I just think it would have been AMAZING with chocolate PB2.

 

Step 4: slowly add water to Shakeology powder. You should eventually see a pudding like mixture. I added more water after taking this picture to get the perfect consistency!

Step five: place a small amount of PB/Coconut oil in bottom of foil liners, then a layer of Shakeology/ water mixture, then another layer of the PB/ Coconut oil mixture

step six: if you are like me, and forget to put the foils on or in something to keep them stable in the freezer, then you need to transport them!!

Step seven: place completed cups in freezer for about 45 mins to an hour! then enjoy!! :)
