Peanut Butter Banana Bread

A few months ago I was shopping at Big Lots, I didn’t have classes on Fridays, so for some reason I thought it was a good idea to always go shopping… hahaha 😡 Any way, I was walking around not looking for anything in particular and came across a Ninja set. I looked at it and it said $30. Of course my first though, this MUST be a knock off brand because there is no way the 6 piece Ninja is $30. So I grabbed my phone (seriously, how did people get by without these??) and looked it up. They went for about $150 and then $80-$100 on amazon. — SCORE!! You bet I grab that right away! It was the only one there, it was obviously meant to be! So how does this tie into PB banana bread? Well, it doesn’t really besides using it to make this bread! hahah But the lesson of the story is, go to Big Lots regularly, you never know what treasures you will find 😉

Okay, now that I fed to your shopping addiction, I’ll finally give you my recipe 🙂


Peanut Butter Banana Bread


  • 4 ripe bananas, peeled
  • 4 eggs, whites and yolks
  • 1/2 c almond flour
  • 1/2 c all natural peanut butter ( I used JIF)
  • 3 Tablespoons unsweetened applesauce
  • 1 Tablespoon melted coconut oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cinnamon (I used Ceylon cinnamon)


  • Preheat your oven to 350 degrees F.
  • Using a paper towel, and a small amount of coconut oil, wipe down the sides of your load pan. Then lay parchment paper into pan to line it.
  • Combine bananas and eggs into a mixer (or bowl with hand mixer) and mix for about 1 minute  to combine ingredients.
  • Add remaining ingredients, mix, but do not over mix!
  • Bake for 45 min-1 hour at 350 degrees F. Allow to cool before serving.


We are more than “co-workers”– we are family!


Last week I had the honor of being qualified and invited to a Leadership retreat help for Diamond coaches by one of the top coaches, and friend, Kati Heifner. If you were to ask me last year if I would have been invited on this amazing trip, I would have said, “Yeah right, I am not THAT successful.” Fast forward to September 4th 2014, the day I hit the rank of a Diamond Coach! Looking back I really wish I would have used my rights to brag just a litttttle bit more 😉 One thing I did learn at this retreat was to rejoice in my accomplishments. It doesn’t matter how big or how small, I did it, I should be proud of it. I am too fast at looking to see what comes next to enjoy the moment sometimes. –Don’t worry! That is going to change!!


The past few days I am still trying to wrap my head around all the amazing people I have been surrounded with, and the fact that I was able to be apart of this special retreat! First off, we got literally SPOILED! Kati knows how to treat a #girlboss, thats for sure! if you are wondering where #girlboss comes from, it is a book! An amazing book that I highly recommend you take the time to read! I promise you will enjoy it and take away something worth while out of it.


We worked a lot on our self confidence and shared storied about ourselves that brought us to be the people we are today. Listening to stories made me realize how strong these women really are. How brave they can be, and that even if we look perfect on that outside, there is a story that formed us into the people we are. I think we tend to look around anything “bad” in life, or take for granted anything “normal”. I encourage you to sit around with a group of friends that you may not have known your whole life, and tell stories of your past, it will make your friendship so much stronger!


Yes, it was a whole bunch of girls (and two guys) so of course tears were flowing and chocolate and wine was in hand! But when we weren’t crying we were bonding and making new friends! The thing I seriously LOVE about being a coach, is every single event I have attended, I left with a new friend. Someone that I clicked with and we got along so well! I wouldn’t trade those events for the world because I know these people GET me, and if they don’t, they LISTEN to me, and support me! Work, family, and hobbies, we might not have everything in common, but we understand that we don’t have to, in order to be amazing friends!

Okay, so we didn’t go cray cray or anything but we had a day FULL of photo shoots. Talk about an amazing experience!!! Even when it wasn’t my turn to get hair or make up done, I loved watching everyone else get pampered. We got to do a three outfit photo shoot with a photographer who knows how to work the camera!! She was awesome to work with and made you feel so comfortable with lights shining and the camera flashing!

We also got spoiled, did I mention that?


We walked around the corner and there were cute boxes stacked high, one with each of our names attached! We got comfy silk robes with out names on them, a Kate Spade Necklace, and a #girlboss dynasty tank top! On top of a place to stay, food to eat, transportation, and good company. I honestly cannot wait until the day that I am able to do this for my team!! I know we will get there one day, and i am DREAMING BIG until it happens!

I couldn’t be happier where I am at in life right now, the people who are in it, and the opportunities I am presented with. I think that people sometimes forget that we DO have power over our happiness. If you are in a job that doesn’t make you so happy you want to do it 24/7, then why are you doing it- not that you HAVE to do it 24/7? You can be happy and live comfortably at the same time. Love what you do, I promise that everything else will fall into place for you.

21 Day Fix Confessions

The 21 Day Fix is all the rave these days! Seriously, this trainer came out of no where, created this program and it launched in February of 2014. Beachbody couldn’t even keep it stocked on the shelves and it was on backorder for months after its big launch. All of that is fine and dandy, but does it really work? Or is everyone just all hyped up because it is the “next big thing”?

My friend Brittany and I talked bcd and forth about this program, and after I did it, she decided it was time to give the program a try. But instead of me telling her story, I am going to let her tell you! Grab a tissue!!!

Starting from a young age, I was always overweight, but I didn’t know much different. Fast food became part of my diet. I made excuses to not drink water, I would grab soda or french fries before juice and carrots. I gained the weight quickly. Doctors told me I needed to watch myself, even my parents tried to help me but it was “too late” I had let my weight spiral out of control but I was ok with it because I was “happy” and wasn’t going to do any physical activity. Years later I still had weight issues, I looked at people around me and thought they were pretty or secretly wished I was “skinny” but had no motivation to do any physical changing….I had friends….people should like me for who I was….I thought. I tried diet pills but nothing worked because I wasn’t working for it….I was looking for the magic pill. When I went to college I actually lost a little weight because I was forced to cook on my own and I wanted to feel good about myself. I would go to the gym….but as winter set in, it was easier to order chinese then make a salad etc. I tried to go to workout classes or walk on my own but nothing was really working. So I found it really to be hopeless and gave up. My junior year I met someone extremely important to me and I lost them three years later because I lost myself. I got “too comfortable” and became lazy, I put on lots of weight, I chose eating out over being active. My idea of a fun night was always something that involved sitting or eating or a combination of the two. They saw I was heading downhill fast and tried to tell me….but I ignored the signs because I thought they’d never leave. My jeans knew the damage I was doing to myself (to be honest I stopped wearing jeans…yoga pants and stretch clothes were my new wardrobe), the number on the scale kept rising, but still I didn’t see it. I know many people can say “How could you not see it?!” but to be honest I truly didn’t or maybe I just didn’t want to admit it. I used to eat more then some boys did, getting seconds, super sizing a meal, eating and then eating again. I didn’t see the effect it had on me. I ordered workout programs with broken promises of changing my ways. It took losing that special person for me to truly see the damage I had done. This “disorder” hadn’t just effected me, it effected the people around me. In a way it was a blessing this person left, had they not I would have never saw who I had become….who I had been for the last 3 years or 20 years. I was miserable, over weight, my clothes barely fit. I wasn’t happy, I wasn’t me. Thats when i decided to make a change. I was sick of seeing the numbers on the scale rise, or buying a size bigger in clothes (it hit me when I order jeans online in a size 20 something), or not even feeling comfortable sitting in a chair. I had boughten the 21 days fix workout kit a couple months prior but I know I needed to stick to it this time. I would be lying if I said it was easy. I made a a commitment to stop going to fast food places, cutting out soda and becoming active with these workouts, drinking lots of water. Even coming this far I still have my days when I want to give up or skip the exercise but when I do I can feel it in my body and I get myself motivated again. I have been doing the 21 day fix program since the end of May and since then I have lost about 45 pounds….I am still shocked myself. I told myself for years it was impossible and in just 5 months I have accomplished so much. It hurts knowing I wouldn’t have lost that special person if I would have done it sooner, but I didn’t know sooner, I didn’t see it sooner. But I made the choice now and I am pushing through. I have to remind myself to enjoy the journey because sometimes I am frustrated when I look in the mirror. I forget this can’t happen overnight and I have to be proud of my progress. But I have to tell people, it’s never too late, and you can’t change until you are ready. People told me for years I had an issues, and I didn’t see it until later. You can’t change something until you want to. So no matter what don’t give up, I have to thank the wonderful coaches and ladies in my workout groups for the motivation because so many times I want to give up but then I talk to them and they remind me why I am here and that I can do this. I’m not where I want to be but I am happy I am not where I use to be.

Destination Wedding 101

Bride to be in the HOUSE!!!! I know I am not the only one, so CONGRATULATIONS to all of you lovely ladies out there!! So, now that your man popped that special question its time to plan!


Something I think we all need to remember going into this whole process is that this is YOUR DAY! You and your fiancé have your own SWAG and you deserve to let that show on your wedding day! Don’t let your 3rd cousins sister’s boyfriends mom tell you what time of the year SHE thinks is the best time for a wedding. Don’t let you aunt, twice removed son’s friend tell you that you NEED the DJ he saw play last weekend. — NO — its YOUR day, do what YOU want. You are the bride and the groom! Take some control!

I think its is SOOO funny that literally as soon as you are engaged the questions start, and they DON’T STOP!! :: You know what I mean?? :: I know you do!!

  1. “Did you set a date yet?”
  2. “What are your colors?”
  3. “Where is it going to be?”
  4. “Did you get your dress yet?”

I know you know EXACTLY what I mean! hahaha You know that they are just as excited as you are, but when you hear it from 372983749283740823+ people, you might want to pull your hair out!

This brings me to MY wedding! I never pictured what I wanted. Some little girls grow up knowing exactly what they want their wedding to be like; me on the other hand, my vision of my wedding was as clear as space….or the ocean. Both have a ton in the “unknown” category. Since we were paying for this basically on our own, we came back to a discussion we had a few months prior to getting engaged. >> DESTINATION WEDDING <<

So of course we wanted to know more. We needed to do a little research, it seemed SO COOL, but we needed more information on what this really entailed.

Step 1: GOOGLE IT >> I am not kidding when I tell you we sat down at the computer and typed in “destination weddings” into the google bar. I am not 100% sure, but about 98% sure that the first link that popped up was original right? We clicked and SURPRISE, it was an actual website and not a weird looking fake thing.

Step 2: CLICK.CLICK.CLICK >> Since this site was very engaging we started clicking around. They had all the information we needed. A ton of different locations with in depth information about weddings in each place. Rain Forest? Island? Igloos? Desert? You name it, they did weddings there, and had the information to provide you with to make a decision if this was a right fit for you!

Step 3: EMAIL, SENT >> As we clicked around and decided that this was something we were completely interested in, we filled out the form for a wedding coordinator to contact us.  PS she is amazing and is SO helpful!

The process was so simple, and as we go through the process (more posts to come) it is only getting easier and easier! — Did you know that on average couples save $19,000 doing a destination wedding over a traditional wedding??

Cran-Banana Oatmeal Cookies

Yummy in my tummy!! These cookies are SO simple, and are very delicious! Simple, that’s what we all love right? Plus healthy, and if we can get a two for one deal here, I say GO FOR IT!!!!

The recipe was derived from the original recipe in the 21 Day Fix eating plan, back in the recipe section. In the book they are called Banana Oatmeal Cookies, buttttt since I added a personal touch to it, I changed to name to accommodate my recipe!

I think one secret I have to my cookies are the ingredients I use, more specifically, the CINNAMON I use! 😉

It isn’t widely known that there is more than one type of cinnamon out there. I personally didn’t know until I was at an organic/natural store the one day and they had two different kinds! This caught my eye so I asked the lady what the difference was. She explain briefly about how celyon cinnamon was the one I probably never heard of, and the other cinnamon was also known as “poor mans” cinnamon. That was about as far as she went into detail with that! But, of course I wanted to know MORE!! I especially wanted to know more when I used it, and it was AHHHHH-MAZING! I mean, the king of all cinnamon was now in my Shakeology that morning! So I looked into it a little bit more on my own!

I found out that there are 4 types of cinnamon: Ceylon, Cassia, Saigon, and Korintje. –SAY WHATTTT? There is this cool website called CinnamonVogue that I found out all this info!

So if you have cinnamon in your cabinet, it is more than likely Cassia cinnamon, which comes from the bark of a tree and is spicy, strong, and sometimes bitter. According to this website over 70% of americans have this type of cinnamon! But what makes Ceylon Cinnamon even more special is its low levels of something called Coumarin. What is that you ask? Well, Coumarin, put simply, is a substance that can cause liver damage, and in sever cases, liver failure! Not that any of us con sure NEAR enough cinnamon to have this happen, if it a very interesting fact about cinnamon!

Soooo to wrap that all up, I did use Ceylon Cinnamon in this recipe! Sooooo on to it thennn!!!

Cran-Banana Oatmeal Cookies

Serving: 2 cookies    Serving Size: 8


  • Nonstick Cooking Spray
  • 1 cup Old-Fashioned Rolled Oats
  • 2 tsp. Ground Cinnamon (I used ceylon cinnamon)
  • 1/4 tsp. Sea Salt
  • 2 Ripe Medium Bananas, mashed
  • 1/4 cup Dried Cranberries
  • 1/4 cup Chopped Walnuts


  • Preheat oven to 350 degrees F.
  • Spray a light coat of nonstick cooking spray on cookies sheet.
  • In a small-medium sized bowl, mix together oats, cinnamon, and salt; mix well
  • Add in mashed banana, dried cranberries, and chopped walnuts; mix thoroughly. — I used my hands since I didn’t pre-mash the bananas. Just make sure to wash them before and after!
  • Drop a heaping tablespoon of mixture onto the sprayed cookie sheet, then flatten with a spatula.
  • Place in oven and let bake for 14-16 minutes, or until firm. Pull out and Enjoy!!

If you are using this during the 21 Day Fix program, like other treats, 2 cookies (one serving) counts as a yellow container!

Honest Body Beast Review from a Cardio Junkie

Who here loves running?? — raise hand jumping up and down–

I have pretty much always been a runner. I played sports my whole life, and when I got older and they got serious most of them included running. 8th grade I was into field hockey.. 9th-11th I played mid field in soccer, senior year I took on cross country, and all 4 years of high school I ran track.

After high school I strayed away from the whole running scene for a while. I went through some hard times, some good times and eventually near the end of college I found myself unmotivated, self conscious, and out of breath walking up 1 flight of stairs. I may not have been completely out of control weight wise, but I packed on a good 10-12 pounds.– & on a girl that isn’t even 5 foot, that shows EVERYWHERE!!!

So then after doing a few at home programs it got me back in the running spirit!! I trained for the Disney Half Marathon and it was AMAZINGGGGG! Then eventually I did the Hershey Half, and the Run for the Diamond in Berwick, Pa (15k race). After all of that I decided I wanted to take on a marathon. Sadly, so many things came up that I had to defer- but I’m coming for you next year Wineglass Marathon!!!

With all of this upset, I was in search of a change of pace. I did the 21 Day fix when my friends did it, and I, as well as them had amazing transformations!! However, I was in the mood for something COMPELTELY different! This is when I turned to Body Beast!

I am in the second phase and honestly, I am LOVING it! It takes me back to high school strength training class, which we were allowed to take instead of gym. In other words, it was exactly what I needed!

So you have watched the infomercials on tv and think, heyyyy Alyssa, that program is for BOYS ONLY! Well, hold your horses! This program is literally for everyone! So yes, it might be low rep, high weight and look a little intimidating. I would be lying if I said I wasn’t shaking in my knees when I pressed play on day one.

One thing I definitely recommend doing is READING THE BOOK! They give you a whole guide to this program ,and I suggest you use it 🙂 There is information on each workout, the science behind it, nutrition, and the supplements. Plus RECIPES! Who doesn’t love getting recipes handed to you!

Meal Plan

This is the one area that I am still trying to find my “nich”. The program has a whole calculation for you based on your body fat % and weight and height and all that fun stuff in order to figure out what to eat daily. I am going to warn you now, it is A LOT of food! I did my first 2 weeks eating like the meal plan said to. I was finding that certain days I was SO HUNGRY and other days I could barely eat half the food I was supposed to. It was probably just me and maybe not going 100% everyday, or not being as active or maybe over active some days. Either way I decided to go away from the meal plan that went with the Body Beast workout.

I really liked the 21 Day Fix when I did it and fell in love with the container system. (THIS is where I got my 21 Day Fix!) So I figured maybe I would try that, but add a few more veggies and carbs. That seemed to work pretty well, but some days still wasn’t enough. So right now I am just free floating with my nutrition plan. I still keep it clean (mostly) and appropriate portion sizes. I will tell you that I do NOT eat perfect by any means, I still have cheat meals and its something I am working on! I have a ton of go to recipes like my balsamic chicken recipe to keep on track!


I may be up in the air with my meal plan, but one thing is do know for sure is the results are REAL! My favorite transformation so far with this are my calves! Maybe its just me, but mannn ohhh mann I am really loving the calf results. The rest are awesome too, I am getting definition in my stomach, my hips are trimming and my booty is getting lifted!


Scale wise, there hasn’t been too much movement, which honestly I didn’t expect to lose POUNDS, I was looking to tone and lose inches. Which is exactly what has happened so far. I am finished with the build phase and I am currently about half way through the bulk phase. In two weeks I’ll be moving into the BEAST phase! Which I am really excited for!

I would 100% recommend this to someone! You don’t have to use heavy weights, use whatever you feel comfortable with! right now I use 0-20 pounds. Some arm exercises I can’t do the full exercise with even 2.5 pounds weights! But then some leg exercises I can use 20 pounds.


When you get a Body Beast Challenge Pack you can either get it with Shakeology or the Supplements. I got it with the supplements. So you get a base shake, fuel shot, suma, and creatine. Being a girl I use the base shake and fuel shot usually 4-5 times a week, the creatine I use one scoop maybe once a week. I Never take the suma because that is full of testosterone, and I don’t need that!!! If you are wondering why I don’t take the creatine as often, it is because I have read mixed reviews on women taking it. there are some good and some bad, so I just take it here and there. I also drink Shakeolgoy daily for breakfast (this is where I got mine from >> HERE. I Use this for my dense dose of nutrition, even though people only think it is for weight loss, it is actually a nutritional shake if you do the research on it. Then I just started using Beachbody’s E&E powder as well. Which I am not sure why I haven’t use this sooner, totally kick starts my workout and keeps me going if I do a double , without leaving me feel poopy, yes I said poopy, afterwards.

Cucumber and Tomato Salad

This is one of my all time favorite recipes! There is something about it that is so refreshing; I think its the vinegar, I love vinegar! It just makes it CRISP! -Do you know what I mean??

This is a clean eating recipe, I first had it when I was doing the Ultimate Reset! (Which was AWESOMEEE by the way!) Although I still make a lot of the recipes that were in that cleanse, this one appears on our dinner table more often than others!


The cool thing about this is, you can easily incorporate the 21 Day Fix containers with it! So you can start talking in colors like everyone else is!

“So, what did you have for lunch Christine?”

“I had 2 yellow, 2 red, and 1 purple”

aka: turkey sandwich and greek yogurt and an apple



  • 1 English cucumber, sliced and cut into half moons
  • 1/4 small container cherry tomatoes, each cut in half
  • 1 tablespoon chopped red inion (optional, I personally opt out of this)
  • 2 tablespoons red wine vinegar
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoon EVOO (extra virgin olive oil)
  • 1 tablespoon chopped freshly flat-leaf parsley (you can use the dried seasoning too)
  • 1 tablespoon chopped fresh bail leaves (dried seasoning is okay here too, but fresh is always better!)
  • Himalayan salt (to taste)
  • herbal seasoning (to taste)



Combine all ingredients in a boss and toss.

I have also made this, as I mentioned before, with the 21 Day Fix containers. I basically used 1 green for the cucumbers (after slices and halved) and 1 green container for the halved cherry tomatoes. Then added the oil and seasons as needed for the quantity I felt right. They are pretty close to what is already here!



Learn to Fall Asleep like a Pro

As promised I told you I would give you all my secrets to how I fall asleep like a pro. You are probably wondering why I don’t say “sleep like a baby”. Well, let’s look at it this way, most babies CRY themselves to sleep! So, you will not find me giving you that as a tip!

There is one thing that I do EVERY NIGHT as soon as I lay down in bed; if I didn’t do it before that. I MAKE A LIST!! How many times do you lay there thinking of what you were SUPPOSED to get done that day that you didn’t and what all you are going to have to do tomorrow?– If you didn’t realize it before, well I am sure you are starting to think, “Oh yeah, I DO do that!”

Our minds are going to keep on going until we put that information somewhere else, you know out of sight out of mind, well how about out of mind out of worry? –ehh I’ll work on it!

Most smart phones have a Notes section, on the iPhone they call it, NOTES hahahah! You can always use pen and paper as well, but who doesn’t have their phone on them all the time, this way you can check it throughout the day. One way to stay on track throughout your day, and not worry about all of this STUFF at night is to just write down! Every night write down a list of things you have to do the next day, yeah I know, this sounds kind of simple, maybe even dumb. But honestly, if you write it down, it is one less thing on your mind!

Now, of course this isn’t ALWAYS going to make you fall asleep as soon as your head hits the pillow, I bet 80% of the time it will though. Actually I need to have a little more faith in this, I would even go as far as 90%. So what about that other 10-20% of the time?

I don’t know how familiar you are with meditating… Don’t stop reading here and thing I am going all hippie or whatever on you. That is just the only word I can think of instead of just “relaxing” and then you would probably be like, ” IF I COULD, I WOULD!!”

So this is what I do when my list doesn’t seem to work. I do a breathing technique. It is super easy an honestly, no one will even know you are doing it. When I lay there and can’t sleep because I have something else on my mind besides my To-Do list, I breathe and clear my mind. Simple right? But what exactly do I do?

While you lay there get comfy, then close your eyes and concentrate on your breathing. Do that once or twice, once you have that down, dig even deeper! Visualize the air you breathe in go in your nose, and into your lungs. See them fill up with air and inflate, then as you breathe out, they deflate and come back out through your nose.

You might think I am crazy for telling you this, but I promise you it will work, if you do it right! There are times I try to concentrate on my breathing and unless you are 100% on THAT, it might not work for you. I have tried to keep track of how many times I have to do this to fall asleep. I think the most I can remember is three times going in and out as one time.

Saturday Morning Cartoons… Or Mind Mush Maker?

I have been babysitting the same family for about 7, YES SEVEN years now! They are not family, but kind of feel like it sometimes! But, I started when there were only three kids and I was a junior in high school. Now, I am a college grad and there are FIVE children.

A few times a year I babysit for a full weekend; Friday, Saturday, and Sunday. Of course between making breakfast, picking toys and food up off the floor, and breaking up mini wrestling matches before they turn into a fist fight, the TV gets turned on. For some reason each time this happens I have a slim sliver of hope that some good old cartoons are going to be playing and I can enjoy some cartoons with the kids. You know, RugRats, RocketPower, PowerPuff Girls, The Wild Thornberrys, and so on, I think you get what I am getting at!! Did i mention Braceface? Yeah, that was a good one too!


Instead, the cartoons they have now, not that they HAVE to be educational, but they are DISGUSTING! I mean, just plain gross and DUMB! They are a few cute ones, Sophia the first is one that I do enjoy! Disney had have better shows, Cartoon Netword however, they need to reevaluate what they are putting on TV for the younger generations to watch. “Uncle Grandpa” is one that I feel like my brain is shrinking the longer I watch it!! There is one that I think is called the Regular Show, and it ism ust WEIRD!! We wonder why some kids are going up with social sues, let turn to some of these werido shows and point some fingers there!

I like the shows that even as an adult I feel like I can get something out of it. A little giggle here, or even learn something new that I didn’t “get” and now makes perfect sense! (yes it happens!) Arthur was also one of my favorites, the theme song is still one that I can recognize right away!! Want a little flash-back? I took the liberty of finding it for you — since google it is just too hard for some people 😉 haha jk, well, but seriously.

I would love to know what some of your favorite cartoons are/were! Do you have kids now and have some “no-no’s” that you won’t let them watch? Personally I might be using YouTube to stream 90s cartoons for my kids..(in like 5 years :p)
