Minty Devil’s Chocolate Cookies

It is the Holiday season and there is not a way around cookies. I have looked high and low, and no matter what, they pop out of everyone’s hands at some point in the season. Of course I won’t complain. I love to stay healthy and on track, but I am human. I will order a cheese steak once in a great while if that is what I am STARVING for. Because if I don’t give in from time to time, you will just be miserable and then go ALL IN and ruin all your hard work! So, I feel the same way about cookies as I do my cheat day cheesesteak.

I like my cookies how I like my healthy recipe, short, sweet and quick!!

When the ingredients list is short, we are all happy!

When we don’t have the chill the dough for 3 days, we are all happy!

When we don’t need to have 7 different bowls going for one recipe, we are all happy!

We made I think 7 different kinds of cookies by the time we were all done. It was a lot of fun, and so cool that we had completely different cookies by the end! Not a single batch were anywhere near the same! We made these, Minty Devil’s Chocolate Cookies, a Peanut Butter Mini muffin type cookie, chocolate chip, a buttery nut one, oatmeal white chocolate chunk and cranberry cookies, no bakes, and molasses. All equally tasty in their own way!!

Okayyyy. I’ll just get to the ingredients now!! 😉

  • 1 box Devil food cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • dove mint chocolate squares

Directions: Combine all ingredients and scoop tablespoon sized servings onto a non greased baking sheet. Once on the sheet slightly press balls down with your thumb to make a slight indentation. Bake at 350 degrees F for 6-9 minutes! Meanwhile, you can start unwrapping the Dove chocolates so they are ready as soon as the cookies come out of the oven! Once done baking, pull out of the oven and (while still hot) place Dove mint squares onto the center of the cookie! Then ENJOY!!

* When using a tablespoon scooper you should make between 20-24 cookies. (that is what I used)
