Minty Devil’s Chocolate Cookies

It is the Holiday season and there is not a way around cookies. I have looked high and low, and no matter what, they pop out of everyone’s hands at some point in the season. Of course I won’t complain. I love to stay healthy and on track, but I am human. I will order a cheese steak once in a great while if that is what I am STARVING for. Because if I don’t give in from time to time, you will just be miserable and then go ALL IN and ruin all your hard work! So, I feel the same way about cookies as I do my cheat day cheesesteak.

I like my cookies how I like my healthy recipe, short, sweet and quick!!

When the ingredients list is short, we are all happy!

When we don’t have the chill the dough for 3 days, we are all happy!

When we don’t need to have 7 different bowls going for one recipe, we are all happy!

We made I think 7 different kinds of cookies by the time we were all done. It was a lot of fun, and so cool that we had completely different cookies by the end! Not a single batch were anywhere near the same! We made these, Minty Devil’s Chocolate Cookies, a Peanut Butter Mini muffin type cookie, chocolate chip, a buttery nut one, oatmeal white chocolate chunk and cranberry cookies, no bakes, and molasses. All equally tasty in their own way!!

Okayyyy. I’ll just get to the ingredients now!! ūüėČ

  • 1 box Devil food cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • dove mint chocolate squares

Directions: Combine all ingredients and scoop tablespoon sized servings onto a non greased baking sheet. Once on the sheet slightly press balls down with your thumb to make a slight indentation. Bake at 350 degrees F for 6-9 minutes! Meanwhile, you can start unwrapping the Dove chocolates so they are ready as soon as the cookies come out of the oven! Once done baking, pull out of the oven and (while still hot) place Dove mint squares onto the center of the cookie! Then ENJOY!!

* When using a tablespoon scooper you should make between 20-24 cookies. (that is what I used)

21 Day Fix Meal Plan and Grocery List

The 21 Day Fix is a pretty awesome program. If you don’t know much about it; someone named Autumn Calabrese came up with everything you need to know to reach your goal weight or body. The key is portion control. You get containers, food lists for each container, and a calorie bracket based on YOUR weight, so you know exactly how much to eat in a day. Simple right? I know, it is pretty amazing! I love MINE, did I mention that? She also had short and sweet 30 min workouts to go along with it, don’t let “short and sweet” fool you though, these can be though! Don’t worry , there is a modifier if needed!!

Even though I love this program and NOW I think it is super duper easy, the first time I tried to make a meal plan I had to read the book THREE TIMES! I came up with a color system and did everything on paper and tried to be extremely organized with it. It did work, but I was not about to do that each week, because I know I am not going to eat the same thing week after week. I know some people can do that, but not me!

So this is what I came up with!

There was something about having a group of people that were on the same journey as me that made it seem really easy and my goals seemed achievable when others were being positive and keeping me on track!

I have this awesome little tablet thing that I use to plan my meals. I made one for all of you and I adjusted it slightly for all of you! This is so simple to use! This is the process I usually take when I plan meals.

Step 1: Find recipes I like, figure out which day I will eat each meal. Then I write it down at the bottom.

Step 2: Go back and highlight or write in the ingredients I need to make each meal!

Step 3: Go grocery shopping and check off the items as I go!

I hope you find this helpful and it makes your planning and shopping go SMOOTH and easy!!

2015 Is Knocking! Are you ready to answer the door?

Is it just me, or is anyone else SHOCKED that 2014 is over. I mean seriously, I know they say the days go faster as you got older, but a whole year just flew by! I was NOT warned about that!!!

Whether I can help it or not 2015 is knocking on the door. But for before I answer I need to be completely prepared. This year is going to be MY year. I can just feel it. I sat down the other day and reflected on this past year. What accompaniments I have made, the ones I missed, and the ones i was afraid to even think about a year ago.

In 2014 I:
:: Graduated from college with my bachelors degree
:: Got my first “real” job
:: Then quickly made Beachbody my full-time job
:: Got engaged
:: Planned a wedding
:: Made AMAZING new friends and couldn’t be more thankful for all my other friends
:: Saw a lot of people’s “true colors”
:: Realized that I CAN be successful, and WILL reach for the stars
:: Grew my team to a point I never thought I could
:: Became a Diamond Coach
:: Moved to a new town

I am sure I did so much more, but I am not going to bore you– HeHe!!

However, 2015 is going to be HUGEEEE! I have big goals; personal and business wise. We live in a time that YOU have complete control over your future. You can graduate with a degree and still get a good job in a completely different field. You can skip college and use your life experiences to take you to the top.

Get EXCITED about your life!! I honestly didn’t know how to do this until I became a coach. Then it was like the little light bulb in my brain went on! It was amazing. It was awesome. Now, I realized that if I have a vision of what i want, and I know what I need to do to get there, NO ONE is stopping me. But why should they! They should grab your hand and say, “How can I help?”

If you don’t have those people in your life, FIND THEM! RIGHT NOW!!! Have you ever heard the say, ” You act more like the closest people your surround yourself with.”? It is totally true! Find those people that want what you want. Reach out to them!! You never know where you will end up!!

Homemade Coffee Creamer

I was in the mood for some coffee this afternoon. I started to make it and freaked out because I didn’t have any coffee creamer in the house! I am not a huge coffee drinker, so we don’t have creamer on hand often. So I started looking around and found a can of lite coconut milk. I knew I had almond milk in the refrigerator. So I looked and saw that most recipes call for those two ingredients!

You will need a can of lite coconut milk, 1 cup of unsweetened almond milk (I used vanilla), 2 tablespoons of raw honey, 1 tablespoon of vanilla, and I added a sprinkle of cinnamon, plus a blender.

Place all ingredients into the blender and blend until combined! Then pour into a storage container and place into the refrigerator until you are ready to use!– Super easy right? RIGHT!!

Banana Split Bites

These are more of a summer type treat- actually who am I trying to kid, it’s fruit and chocolate, it is an EVERYDAY type of treat! ūüôā I don’t think there is anyway you can mess this recipe up!! Even if you are licking chocolate off the walls! ūüėČ Very easy ingredients (see picture below!)

Directions:

  • Peel banana and cut, cut pineapple in about 1 inch pieces, and slice strawberries in half (make sure you cut the tops off first!)
  • Heat up chocolate and coconut oil on the stove, stir occasionally so you don’t burn it! Also, line a baking sheet with parchment paper; set aside
  • Stack one of each piece of fruit onto a toothpick or screwer
  • Dip one trio at a time into the melted chocolate, at this time add nuts or shredded coconut before the chocolate hardens
  • After dipped, place onto a baking sheet lined with parchment paper. Once all are complete to your preference, place baking sheet in the freezer to harden chocolate before serving.

Baked Coconut Crusted Chicken Tenders

If you want something not too time consuming, but a meal the whole family will enjoy, you HAVE to try these out!!! I found this recipe on Pinterest and tweaked it a little to my liking!

One of the reasons why I love this recipe is because you don’t have to measure the ingredient EXACTLY right for it to turn out perfect. Because let’s face it, we have all beat the batter 2 second too long before and had a flop of a cake! The ingredients and steps are super simple!


Ingredients:

  • 1.5-2 pounds pre sliced chicken tenders
  • whole whiter flour
  • 2 eggs
  • splash of skim milk
  • 1 cup unsweetened coconut
  • 1 cup Italian bread crumbs
  • Olive Oil Spray (spray can: PAM)
  • sweet chili sauce (optional)

Directions

  • Preheat your oven to 400 degrees F
  • Take out three bowls. In the first combine your bread crumbs and coconut; season with a little salt and pepper. In the next bowl whisk together 2 eggs and milk. In the third bowl add the flour.
  • Line up your bowls so that you have the chicken, then flour bowl, egg mixtures, and last the bread crumbs and coconut, ending with a baking sheet
  • Spray baking sheet with olive oil spray, coat evenly ¬†and well.
  • For each chicken tender, first coat it in the flour, then dunk it in the egg mixture, then coat in the bread crumbs and coconut combination before placing on the baking sheet.
  • Repeat until you used up all the chicken, or desired amount.
  • Before placing in the oven, lightly spray tops of tenders with the olive oil spray so they can get crispy on the top!
  • Place in he oven and bake for 10-15 minutes, flipping them half way through. Bake until fully cooked.

I served this with sweet chili sauce for dipping and then sea salt and peppered Brussels sprouts on the side! Made for a complete and yummy meal!

4 Ingredient Pancakes

Ever want something homemade for breakfast, even if it isn’t fancy, you just put some effort into it and it makes it so much better!! We all have crazy lives in our own way, so quick and simple is the name of the game these days! Which is exactly what they pancakes are! I will e the first to tell you, I have tried “3 ingredient” pancakes and this and that. None of them were good! They need to be just like box pancakes for me to like them! So what are the FOUR ingredients that you will need?

The Directions are simple!

  1. Combine all ingredients into a blender, and blend until fully combined!
  2. Pour batter out onto griddle or stove top pan. This batch should make about 6 pancakes
  3. Let sit for a minute, then flip!

I decided today I was going to put a bit of all natural peanut butter and maple syrup on my pancakes! It was soo good! you can add fresh fruit or maybe even some yogurt! let your creative juice flow ladies and gents!

I might have forgotten one or two! I did by Slim in 6 for my mom, and I have done a few of those workouts with her, and I also got Insanity for my sister. I have YET to try insanity. Is that weird?? Probably! There is just ALWAYS a new program coming out I want to jump on, I never got around to insanity! I think they just next jumped out at me. Which is cool, just because I’m a coach doesn’t mean I need to “LOVE” every second of every program. I am human and I have workouts I like and ones I dislike.

When they first released the promo video for Insanity Max:30 I honestly watched it like 6 times!!! I was THAT excited about it! There is something about a program making you MAX out, that scares me, but makes me KNOW that it will push me to my MAX! Have you watched it yet? If not I have it right here for you!!

Ahhhh don’t you just want to get up and do it right now!? I know I do. It is going to be a game changer for a lot of people, I can tell you that!

Even though I am so so excited about this program. I am also really scared! I think this is going to be the one that I need to put MYSELF in the challenge group for extra accountability and motivation. So I decided that I am going to do this program right along side of you for the test group! Me and 10 dedicated, focused, and determined people are going to press play on December 15th for day one of Insanity Max:30. Will you be there with us?
