Baked Coconut Crusted Chicken Tenders



If you want something not too time consuming, but a meal the whole family will enjoy, you HAVE to try these out!!! I found this recipe on Pinterest and tweaked it a little to my liking!

One of the reasons why I love this recipe is because you don’t have to measure the ingredient EXACTLY right for it to turn out perfect. Because let’s face it, we have all beat the batter 2 second too long before and had a flop of a cake! The ingredients and steps are super simple!


  • 1.5-2 pounds pre sliced chicken tenders
  • whole whiter flour
  • 2 eggs
  • splash of skim milk
  • 1 cup unsweetened coconut
  • 1 cup Italian bread crumbs
  • Olive Oil Spray (spray can: PAM)
  • sweet chili sauce (optional)


  • Preheat your oven to 400 degrees F
  • Take out three bowls. In the first combine your bread crumbs and coconut; season with a little salt and pepper. In the next bowl whisk together 2 eggs and milk. In the third bowl add the flour.
  • Line up your bowls so that you have the chicken, then flour bowl, egg mixtures, and last the bread crumbs and coconut, ending with a baking sheet
  • Spray baking sheet with olive oil spray, coat evenly  and well.
  • For each chicken tender, first coat it in the flour, then dunk it in the egg mixture, then coat in the bread crumbs and coconut combination before placing on the baking sheet.
  • Repeat until you used up all the chicken, or desired amount.
  • Before placing in the oven, lightly spray tops of tenders with the olive oil spray so they can get crispy on the top!
  • Place in he oven and bake for 10-15 minutes, flipping them half way through. Bake until fully cooked.

I served this with sweet chili sauce for dipping and then sea salt and peppered Brussels sprouts on the side! Made for a complete and yummy meal!



4 Ingredient Pancakes


Ever want something homemade for breakfast, even if it isn’t fancy, you just put some effort into it and it makes it so much better!! We all have crazy lives in our own way, so quick and simple is the name of the game these days! Which is exactly what they pancakes are! I will e the first to tell you, I have tried “3 ingredient” pancakes and this and that. None of them were good! They need to be just like box pancakes for me to like them! So what are the FOUR ingredients that you will need?

The Directions are simple!

  1. Combine all ingredients into a blender, and blend until fully combined!
  2. Pour batter out onto griddle or stove top pan. This batch should make about 6 pancakes
  3. Let sit for a minute, then flip!

I decided today I was going to put a bit of all natural peanut butter and maple syrup on my pancakes! It was soo good! you can add fresh fruit or maybe even some yogurt! let your creative juice flow ladies and gents!

I might have forgotten one or two! I did by Slim in 6 for my mom, and I have done a few of those workouts with her, and I also got Insanity for my sister. I have YET to try insanity. Is that weird?? Probably! There is just ALWAYS a new program coming out I want to jump on, I never got around to insanity! I think they just next jumped out at me. Which is cool, just because I’m a coach doesn’t mean I need to “LOVE” every second of every program. I am human and I have workouts I like and ones I dislike.

When they first released the promo video for Insanity Max:30 I honestly watched it like 6 times!!! I was THAT excited about it! There is something about a program making you MAX out, that scares me, but makes me KNOW that it will push me to my MAX! Have you watched it yet? If not I have it right here for you!!

Ahhhh don’t you just want to get up and do it right now!? I know I do. It is going to be a game changer for a lot of people, I can tell you that!

Even though I am so so excited about this program. I am also really scared! I think this is going to be the one that I need to put MYSELF in the challenge group for extra accountability and motivation. So I decided that I am going to do this program right along side of you for the test group! Me and 10 dedicated, focused, and determined people are going to press play on December 15th for day one of Insanity Max:30. Will you be there with us?

Peanut Butter Banana Bread

A few months ago I was shopping at Big Lots, I didn’t have classes on Fridays, so for some reason I thought it was a good idea to always go shopping… hahaha 😡 Any way, I was walking around not looking for anything in particular and came across a Ninja set. I looked at it and it said $30. Of course my first though, this MUST be a knock off brand because there is no way the 6 piece Ninja is $30. So I grabbed my phone (seriously, how did people get by without these??) and looked it up. They went for about $150 and then $80-$100 on amazon. — SCORE!! You bet I grab that right away! It was the only one there, it was obviously meant to be! So how does this tie into PB banana bread? Well, it doesn’t really besides using it to make this bread! hahah But the lesson of the story is, go to Big Lots regularly, you never know what treasures you will find 😉

Okay, now that I fed to your shopping addiction, I’ll finally give you my recipe 🙂


Peanut Butter Banana Bread


  • 4 ripe bananas, peeled
  • 4 eggs, whites and yolks
  • 1/2 c almond flour
  • 1/2 c all natural peanut butter ( I used JIF)
  • 3 Tablespoons unsweetened applesauce
  • 1 Tablespoon melted coconut oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cinnamon (I used Ceylon cinnamon)


  • Preheat your oven to 350 degrees F.
  • Using a paper towel, and a small amount of coconut oil, wipe down the sides of your load pan. Then lay parchment paper into pan to line it.
  • Combine bananas and eggs into a mixer (or bowl with hand mixer) and mix for about 1 minute  to combine ingredients.
  • Add remaining ingredients, mix, but do not over mix!
  • Bake for 45 min-1 hour at 350 degrees F. Allow to cool before serving.


We are more than “co-workers”– we are family!


Last week I had the honor of being qualified and invited to a Leadership retreat help for Diamond coaches by one of the top coaches, and friend, Kati Heifner. If you were to ask me last year if I would have been invited on this amazing trip, I would have said, “Yeah right, I am not THAT successful.” Fast forward to September 4th 2014, the day I hit the rank of a Diamond Coach! Looking back I really wish I would have used my rights to brag just a litttttle bit more 😉 One thing I did learn at this retreat was to rejoice in my accomplishments. It doesn’t matter how big or how small, I did it, I should be proud of it. I am too fast at looking to see what comes next to enjoy the moment sometimes. –Don’t worry! That is going to change!!


The past few days I am still trying to wrap my head around all the amazing people I have been surrounded with, and the fact that I was able to be apart of this special retreat! First off, we got literally SPOILED! Kati knows how to treat a #girlboss, thats for sure! if you are wondering where #girlboss comes from, it is a book! An amazing book that I highly recommend you take the time to read! I promise you will enjoy it and take away something worth while out of it.


We worked a lot on our self confidence and shared storied about ourselves that brought us to be the people we are today. Listening to stories made me realize how strong these women really are. How brave they can be, and that even if we look perfect on that outside, there is a story that formed us into the people we are. I think we tend to look around anything “bad” in life, or take for granted anything “normal”. I encourage you to sit around with a group of friends that you may not have known your whole life, and tell stories of your past, it will make your friendship so much stronger!


Yes, it was a whole bunch of girls (and two guys) so of course tears were flowing and chocolate and wine was in hand! But when we weren’t crying we were bonding and making new friends! The thing I seriously LOVE about being a coach, is every single event I have attended, I left with a new friend. Someone that I clicked with and we got along so well! I wouldn’t trade those events for the world because I know these people GET me, and if they don’t, they LISTEN to me, and support me! Work, family, and hobbies, we might not have everything in common, but we understand that we don’t have to, in order to be amazing friends!

Okay, so we didn’t go cray cray or anything but we had a day FULL of photo shoots. Talk about an amazing experience!!! Even when it wasn’t my turn to get hair or make up done, I loved watching everyone else get pampered. We got to do a three outfit photo shoot with a photographer who knows how to work the camera!! She was awesome to work with and made you feel so comfortable with lights shining and the camera flashing!

We also got spoiled, did I mention that?


We walked around the corner and there were cute boxes stacked high, one with each of our names attached! We got comfy silk robes with out names on them, a Kate Spade Necklace, and a #girlboss dynasty tank top! On top of a place to stay, food to eat, transportation, and good company. I honestly cannot wait until the day that I am able to do this for my team!! I know we will get there one day, and i am DREAMING BIG until it happens!

I couldn’t be happier where I am at in life right now, the people who are in it, and the opportunities I am presented with. I think that people sometimes forget that we DO have power over our happiness. If you are in a job that doesn’t make you so happy you want to do it 24/7, then why are you doing it- not that you HAVE to do it 24/7? You can be happy and live comfortably at the same time. Love what you do, I promise that everything else will fall into place for you.

21 Day Fix Confessions

The 21 Day Fix is all the rave these days! Seriously, this trainer came out of no where, created this program and it launched in February of 2014. Beachbody couldn’t even keep it stocked on the shelves and it was on backorder for months after its big launch. All of that is fine and dandy, but does it really work? Or is everyone just all hyped up because it is the “next big thing”?

My friend Brittany and I talked bcd and forth about this program, and after I did it, she decided it was time to give the program a try. But instead of me telling her story, I am going to let her tell you! Grab a tissue!!!

Starting from a young age, I was always overweight, but I didn’t know much different. Fast food became part of my diet. I made excuses to not drink water, I would grab soda or french fries before juice and carrots. I gained the weight quickly. Doctors told me I needed to watch myself, even my parents tried to help me but it was “too late” I had let my weight spiral out of control but I was ok with it because I was “happy” and wasn’t going to do any physical activity. Years later I still had weight issues, I looked at people around me and thought they were pretty or secretly wished I was “skinny” but had no motivation to do any physical changing….I had friends….people should like me for who I was….I thought. I tried diet pills but nothing worked because I wasn’t working for it….I was looking for the magic pill. When I went to college I actually lost a little weight because I was forced to cook on my own and I wanted to feel good about myself. I would go to the gym….but as winter set in, it was easier to order chinese then make a salad etc. I tried to go to workout classes or walk on my own but nothing was really working. So I found it really to be hopeless and gave up. My junior year I met someone extremely important to me and I lost them three years later because I lost myself. I got “too comfortable” and became lazy, I put on lots of weight, I chose eating out over being active. My idea of a fun night was always something that involved sitting or eating or a combination of the two. They saw I was heading downhill fast and tried to tell me….but I ignored the signs because I thought they’d never leave. My jeans knew the damage I was doing to myself (to be honest I stopped wearing jeans…yoga pants and stretch clothes were my new wardrobe), the number on the scale kept rising, but still I didn’t see it. I know many people can say “How could you not see it?!” but to be honest I truly didn’t or maybe I just didn’t want to admit it. I used to eat more then some boys did, getting seconds, super sizing a meal, eating and then eating again. I didn’t see the effect it had on me. I ordered workout programs with broken promises of changing my ways. It took losing that special person for me to truly see the damage I had done. This “disorder” hadn’t just effected me, it effected the people around me. In a way it was a blessing this person left, had they not I would have never saw who I had become….who I had been for the last 3 years or 20 years. I was miserable, over weight, my clothes barely fit. I wasn’t happy, I wasn’t me. Thats when i decided to make a change. I was sick of seeing the numbers on the scale rise, or buying a size bigger in clothes (it hit me when I order jeans online in a size 20 something), or not even feeling comfortable sitting in a chair. I had boughten the 21 days fix workout kit a couple months prior but I know I needed to stick to it this time. I would be lying if I said it was easy. I made a a commitment to stop going to fast food places, cutting out soda and becoming active with these workouts, drinking lots of water. Even coming this far I still have my days when I want to give up or skip the exercise but when I do I can feel it in my body and I get myself motivated again. I have been doing the 21 day fix program since the end of May and since then I have lost about 45 pounds….I am still shocked myself. I told myself for years it was impossible and in just 5 months I have accomplished so much. It hurts knowing I wouldn’t have lost that special person if I would have done it sooner, but I didn’t know sooner, I didn’t see it sooner. But I made the choice now and I am pushing through. I have to remind myself to enjoy the journey because sometimes I am frustrated when I look in the mirror. I forget this can’t happen overnight and I have to be proud of my progress. But I have to tell people, it’s never too late, and you can’t change until you are ready. People told me for years I had an issues, and I didn’t see it until later. You can’t change something until you want to. So no matter what don’t give up, I have to thank the wonderful coaches and ladies in my workout groups for the motivation because so many times I want to give up but then I talk to them and they remind me why I am here and that I can do this. I’m not where I want to be but I am happy I am not where I use to be.

Destination Wedding 101

Bride to be in the HOUSE!!!! I know I am not the only one, so CONGRATULATIONS to all of you lovely ladies out there!! So, now that your man popped that special question its time to plan!


Something I think we all need to remember going into this whole process is that this is YOUR DAY! You and your fiancé have your own SWAG and you deserve to let that show on your wedding day! Don’t let your 3rd cousins sister’s boyfriends mom tell you what time of the year SHE thinks is the best time for a wedding. Don’t let you aunt, twice removed son’s friend tell you that you NEED the DJ he saw play last weekend. — NO — its YOUR day, do what YOU want. You are the bride and the groom! Take some control!

I think its is SOOO funny that literally as soon as you are engaged the questions start, and they DON’T STOP!! :: You know what I mean?? :: I know you do!!

  1. “Did you set a date yet?”
  2. “What are your colors?”
  3. “Where is it going to be?”
  4. “Did you get your dress yet?”

I know you know EXACTLY what I mean! hahaha You know that they are just as excited as you are, but when you hear it from 372983749283740823+ people, you might want to pull your hair out!

This brings me to MY wedding! I never pictured what I wanted. Some little girls grow up knowing exactly what they want their wedding to be like; me on the other hand, my vision of my wedding was as clear as space….or the ocean. Both have a ton in the “unknown” category. Since we were paying for this basically on our own, we came back to a discussion we had a few months prior to getting engaged. >> DESTINATION WEDDING <<

So of course we wanted to know more. We needed to do a little research, it seemed SO COOL, but we needed more information on what this really entailed.

Step 1: GOOGLE IT >> I am not kidding when I tell you we sat down at the computer and typed in “destination weddings” into the google bar. I am not 100% sure, but about 98% sure that the first link that popped up was original right? We clicked and SURPRISE, it was an actual website and not a weird looking fake thing.

Step 2: CLICK.CLICK.CLICK >> Since this site was very engaging we started clicking around. They had all the information we needed. A ton of different locations with in depth information about weddings in each place. Rain Forest? Island? Igloos? Desert? You name it, they did weddings there, and had the information to provide you with to make a decision if this was a right fit for you!

Step 3: EMAIL, SENT >> As we clicked around and decided that this was something we were completely interested in, we filled out the form for a wedding coordinator to contact us.  PS she is amazing and is SO helpful!

The process was so simple, and as we go through the process (more posts to come) it is only getting easier and easier! — Did you know that on average couples save $19,000 doing a destination wedding over a traditional wedding??
